Easy Asian Steak Bites

There's something about steak and mushrooms together. They're a delicious combination in many forms, but make them bite sized and marinate them quickly, and now we've made them into an easy weeknight dinner the whole family will love. So if you're looking for savory flavors in half an hour with minimal ingredients, this one's for you.

  • Quick: With only a few minutes needed for preparation, 10 minutes to marinate while your oven preheats, and 10 minutes cooking time, you can have dinner on the table in a real life half hour.
  • Flexible: Choose your favorite Asian sauce and any cut of steak you prefer or is on sale. It's also easy to add a side dish to this meal by roasting some extra vegetables or potatoes in the same oven.
  • Kid-Friendly: Everything is already bite sized when it gets to the table, which is especially nice if you have a munchkin that wants to do everything like mommy or daddy.

Let's get started! Here's what you'll need:

Ingredients:

Steak- I'm using petite sirloin steak here, but any steak cut will be fine- feel free to grab whatever your grocery store has on sale. I've used tri tip and flank steak before and all of them have turned into juicy steak bites.

Mushrooms- You can buy the sliced mushrooms or quarter whole ones. Whole will last a bit longer in your fridge, so I opt for those if not making the dish in the day or two after grocery shopping.

Asian Inspired Sauce- I'm using Trader Joe's Gyoza dipping sauce, but you're looking for an asian inspired sauce that leans on soy sauce, sugar, and rice vinegar. Teriyaki sauce is another great choice.

Oil- If your sauce has oil in the first 3 ingredients you can skip this, but if it doesn't we'll want to add a bit. Oil helps keep everything from sticking to the pan and helps our sauce flavors carry into the meat. You want a high heat neutral oil like avocado oil, and could use some sesame oil if there isn't any in your sauce. A half teaspoon or so of seasame oil adds great flavor, but a full tablespoon can be overpowering.

Optional Garnishes- I don't typically reach for these, but if you want to give your dish a little more texture you can top it with sesame seeds after cooking. Green onions are another fun way to add some color and flavor.

Equipment:

We'll need a baking sheet to bake these on, a bowl and spatula for stirring, and some measuring cups. If you got precut steak bites and mushroom slices you can skip the knife and cutting board, but you'll need those if you're chopping like me. Just the essentials today!

How to Make This Delicious Asian Steak Bites Recipe:

Step 1: Slice Meat & Mushrooms

First we need to chop everything up into bite-sized pieces. For the steak you want to go for ½ inch to ¾ inch wide pieces of steak. With mushrooms generally quartering them by cutting in half both directions is a good sized, but if they're smaller mushrooms you can just halve them.

Step 2: Mix & Marinate

Place your steak pieces and sliced mushrooms into a medium or large bowl, and top with the sauce and oil. Give it a good stir, then preheat your oven to 400 degrees F and let the steak mixture marinate while the oven preheats. We want it to sit a good 10 minutes to let the sauce flavors get into the meat, and this lets the meat get closer to room temperature as well before cooking.

Step 3: Transfer & Bake

Spread the steak and mushroom mix in a single layer on a baking sheet. Pop it in the oven and bake for 8 minutes, then switch the oven to broil for an additional minute or two to crisp everything up. Don't walk away once you have switched to the broil setting, because burning these would be even more sad than my oven is dirty. Yes, I know it needs cleaned.

Step 4: Rest & Enjoy

Once you pull the steak bites out of the oven, go ahead and let them rest for 2-3 minutes so they don't burn your mouth. Then enjoy! If you have any leftovers be sure to store them in an airtight container in the fridge, and eat them up within 3-4 days.

Side Dish Ideas

These steak bites already have a vegetable, but I sometimes roast potatoes along with them. You can halve some baby potatoes and toss those on the same sheet pan with a 15-20 minute head start on the meat, or these parmeasan potato slices can be made on their own sheet.

They're also great over white rice like I have them here. You can also use brown rice or cauliflower rice if that's your jam.

FAQs

Can I make these in the air fryer?

Yes! You'll reduce the cook time down to 6-7 minutes, though you may need to work in batches depending on the size of your air fryer.

Can I make this in a skillet?

Sure thing. Grab a large skillet and after the bites have marinated a few minutes get the empty skillet hot on medium high heat. Then add the marinated beef and veggies to the hot skillet in a single layer. Once you have a nice sear on the meat turn the burner down to medium heat- they'll take 5-10 minutes depending on your size and how well done you want your steak bites.

Can I use a different vegetable?

Yes, however a lot of vegetables that pair well with asian flavors like bell peppers, broccoli, or carrots take longer than the steak to cook nicely, so you'll want to start those ahead of the meat by about 10 minutes. For a true swap try a vegetable like sugar snap peas that doesn't need much time, or is shaved into thin slices to cook fast- carrots and zucchini do well that way.

Can I make my own sauce?

Absolutely. Most store bought sauces will have some sugar while homemade usually don't, so for a sauce recipe I'd lean on something like the simple brown sugar and soy sauce based marinade from this chicken teriyaki but adding about a quarter cup of rice vinegar or mirin. Mirin is sweet, so if you have that be sure to tone down the sugar as well.

Ingredients
  

  • 1 lb steak cut bite sized

Instructions
