Oven Roasted Parmesan Garlic Crusted Potatoes

Need an easy potato side dish that preps fast and doesn't take an hour to cook? These savory parmesan crusted potatoes are the perfect side dish for a wide variety of dinners. Seasoned with garlic powder, salt, pepper, and oil, they compliment most dishes and just as importantly, use ingredients you probably have on hand. Tender inside with a crispy golden brown outside and great flavor, they're sure to be a hit with the potato lovers in your house.

  • Fast - Prepping these potatoes takes just a few minutes, and once they're in the oven, your work is basically done. Slices also bake a lot faster than whole potatoes.
  • Simple Ingredients - If you've got potatoes and parmesan, you've probably got everything else too.
  • Kid-friendly - While not sweet like these roasted sweet potato slices, they're easy to grab without a fork. Finger friendly foods just tend to be a winner with the littles.
  • Customizable- Prefer Italian seasoning to pepper? Go for it. If you want some heat, add a sprinkle of red pepper flakes- these are easy to make your own.

Let's get started! Here's what you'll need:

Ingredients:

Potatoes- I'm using gold potatoes here, but russet potatoes, red potatoes, or white potatoes are all fine choices. You could even use halved baby potatoes, but depending on their size they may take a bit longer to bake.

Oil- You could also use olive oil, avocado oil, melted coconut oil, or melted butter. Melting butter is an extra step, which is the reason I reach for oil instead.

Parmesan Cheese- Grating a block will give you the best flavor, but I've used preshredded and even the green can in a pinch, and they've always turned out fine.

Garlic Powder- An easy way to add flavor! While on my garlic parmesan chicken legs I reach for fresh, on the potato slices fresh garlic is more prone to burning, which is why I skip that here. If you want to mix some garlic paste into your oil instead that would be fine. If you want to use fresh be sure it stays on the potatoes and under the cheese.

Black Pepper & Sea Salt- Our standby spices, you'll see these in most of my savory recipes. You can always use regular table salt instead.

Equipment:

We'll need a baking sheet to bake these on, a knife and cutting board to slice them, and possibly some measuring spoons- though you're welcome to measure the spices and cheese with your heart instead. For adding the oil a pastry brush is very handy, or you can shake them in a bowl or ziptop bag to coat them with it. I also recommend using a nonstick spray or aluminum foil if you're cooking on a metal pan or in a glass baking dish. I don't find I need spray if I bake on my stoneware, but I still usually reach for the metal sheet because stoneware is heavy.

How to Make These Crispy Parmesan Potatoes

Step 1: Slice & Arrange

First things first, go ahead and preheat your oven to 400 degrees F so it'll be ready when you're done with prep. Rinse your potatoes, and give them a scrub. Then slice them into ½" rounds, and if you're using the pastry brush option put them on your sheet pan in a single layer. If you are a shake-to-season fan then toss them in a bowl or bag.

Step 2: Oil & Season

If you're using a bag or bowl go ahead and add the oil, salt, pepper, and garlic powder and shake or stir everything together until it's well coated. Then place them on your baking sheet.

If you have a pastry brush and don't want to wash a large bowl, top each slice with a bit of oil with your brush, then sprinkle on your salt, pepper, and garlic powder. Either way we should end up with a sheet of seasoned potato slices that are still missing cheese.

Step 3: Top & Bake

Speaking of that missing cheese, time to add it! Add an even layer of grated parmesan cheese across the top of the potatoes and pop that baking pan into your preheated oven. Check on them after 20 minutes or so, they may need up to about 25, and are ready when the potatoes are fork tender and the parmesan topping is a nice golden brown.

Step 4: Serve & Enjoy!

Feel free to garnish these with a bit of extra cheese, green onions or fresh parsley if you're feeling fancy. Be sure to store any leftovers in an airtight container in the fridge and eat within a few days.

FAQ

Can I make these in my air fryer?

Sure thing! Mine is a little small for the amount I'd want to make, but you can definitely cook them in one. Just reduce the cooking time by about a third, so check on them after about 14 minutes and keep a close eye on them from there if they aren't quite done.

Can I use a different cheese?

Yes, however you'll likely need to add it later than you would parmesan. Parmesan is a hard cheese so it gets nicely crisp with this baking time, but it's too long for the more melty cheeses. For something like mozzarella or cheddar topped potatoes, wait to add them until the potatoes are on their last 5 minutes or so of baking so the cheese melts but doesn't burn. On the other hand if you have a hard cheese blend like an asiago parmesan mixture, that you can use like the parmesan without issue.

Should I soak the potatoes after cutting?

That depends on how crispy you like your potatoes. Rinsing or soaking cut potatoes washes away some of the starch, which clings to moisture. The outside of the potatoes will get a more crispy edge if you soak them in cold water for a couple minutes and pat them dry before seasoning. The parmesan gives you a crispy cheese layer on top either way, but if you want crispy potatoes on the bottom side too you may find it worth the extra step.

  • 1.5 lbs potatoes
  • 1.5 oz parmesan cheese
  • 1 tablespoon oil
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper

Instructions
 

  • Preheat oven to 400 degrees F.
  • Rinse and scrub potatoes. Slice into ½" thick rounds and arrange on a greased baking sheet.
  • Use a pastry brush to brush tops of potatoes with oil. Season with salt, pepper, and garlic powder.
  • Top potatoes with parmesan and bake for 20-25 minutes, until slices are fork tender and parmesan is golden brown. Enjoy!

Notes

If you don't have a pastry brush you can place the potatoes, oil, and seasonings in a zip top bag or bowl and coat that way before arranging on the baking pan.
For a convection oven or air fryer, reduce cooking time to 14-18 minutes.
For more crispy potatoes, soak sliced potatoes in cold water and pat dry before adding oil and seasonings.
