Smoked Sausage & Sweet Potato Skillet Hash with Onion

You'll love this one-pan sweet potato and smoked sausage skillet! It's packed with wholesome ingredients, an easy recipe that's perfect for busy weeknights.

​With tender sweet potatoes, savory smoked sausage, and caramelized sweet onions, this skillet meal is a satisfying blend of flavors and textures. And the best part? You only need one pan to make it! That means easy cleanup and more time to enjoy your day.

Let's get started! Here's what you'll need:

Ingredients:

Sweet Potato- We're using orange sweet potatoes or garnet yams, though you could substitute white sweet potato instead.

Sweet Onion- The sweetness of a sweet onion gives a nice flavor to this dish, but you can use a white onion or yellow onion if that's what you have. You could also opt for bell peppers instead or in addition to the onion.

Smoked sausage- For ease this dish uses pre-cooked sausage and adds it last- if you use a raw meat you'll want to switch the steps up a bit to cook it first.

Oil- I use olive oil for this dish, but you can easily switch it out for avocado oil or another neutral tasting oil.

Salt and Black Pepper- Simple seasonings let the flavors of the dish shine, but if you want to add some extra flavor garlic powder or italian seasoning is great in this too.

Equipment:

You'll need a large skillet that is oven-safe, I like to use my cast iron but a non-stick skillet is fine too. You'll also need a cutting board and knife, along with a spatula for stirring. Optionally you may want a vegetable peeler, but peeling the sweet potato isn't strictly necessary.

How to make this one-pan sausage dish:

Step 1: Prepare vegetables

The first thing we'll do is dice up our onion and cut the sweet potato into half inch cubes. Also go ahead and preheat your oven to 350 F.

Step 2: Start veggies and cut sausage

Place the onion and sweet potato cubes in your skillet along with the oil, salt, and pepper. Turn your stove on medium heat and give them an occasional stir, we're going to give them a 10 minute head start since the sausage is already cooked. Meanwhile, cut your sausage into circles or half circles.

Step 3: Add sliced sausage and bake

Add the now sliced smoked sausage to your dish and give it another stir to combine it with the vegetable mixture. While you can finish this on the stovetop, it's less hands-on time to pop it in the oven at this point. Cook for 20-25 minutes, or until the potatoes are fork tender and the sausage is good and hot (165 F).

Step 4: Serve and enjoy

Serve hot, and store any leftovers in an airtight container in the fridge. Enjoy!

FAQs

​Can I use another type of sausage?

Yes! Whatever type you like from chicken sausage or turkey sausage to spicy italian sausage are all good choices. Any uncooked sausage will need cooked a few mintues first to ensure that it reaches a safe temperature, so that will extend the cook time a bit.  If the one you choose releases a fair amount of grease you may want to drain that as well, though you can use some of it in place of the oil.

What other vegetables can I use?

​Red pepper or green pepper go well with this dish, along with most any onion, carrots, or hearty vegetable. You can wilt spinach in at the end if you'd like some green, or garnish with green onions. Brussels sprouts cut in half would roast well with the dish as well.

Is this dinner or breakfast?

​Honestly, it can be either, or both. We enjoy it as dinner and then serve the leftovers with eggs for a hot breakfast, it's a good dish any time of day!

Ingredients
  

  • 1 lb sweet potato
  • 1 large sweet onion
  • 14 oz smoked sausage
  • 1 tablespoon olive oil
  • ½ teaspoon black pepper
  • ½ teaspoon sea salt

Instructions
 

  • Chop sweet potatoes and onion into ½" cubes or pieces, and add to skillet with oil, salt, and pepper. Preheat oven to 350 F.
  • Cook over medium heat for 10 minutes. Meanwhile slice smoked sausage into rounds or half rounds.
  • Add sausage to skillet and stir to combine. Cook in the oven for 20-25 minutes, until potatoes are tender and sausage is piping hot.

Notes

You can finish the skillet on the stove instead of in the oven, stirring occasionally.
