This episode features a recipe developed by Kathy Berget from Beyond The Chicken Coop.
Marinating chicken thighs in Italian dressing is a super easy and budget friendly meal, even if you don't have Italian dressing from the store handy- Kathy has a simple homemade recipe that you likely have everything for already. Anne talks through making it for the first time along with how to bake it if your grilling season hasn't arrived yet.
The full printable recipe is linked above, but if you're making your grocery list here's what you'll need:
- Meat: bone-in, skin-on chicken thighs (you can substitute, but the cook time may change)
- Seasoning (aside from marinade): Salt & Pepper to taste
- Marinade/Dressing components: Olive oil, white wine vinegar, garlic powder, onion powder, dried oregano, dried basil, dijon mustard, sugar or honey, red pepper flakes, and salt.
