Ingredients
  

  • 1 slice sourdough bread
  • ½ large avocado
  • ½ teaspoon lemon juice
  • 2 slices smoked salmon
  • 1 tablespoon diced red onion
  • 1 teaspoon capers

Instructions
 

  • Lightly toast sourdough to your liking. Meanwhile, mash avocado and lemon juice together in a small bowl or on a cutting board.
  • Once toast is browned to your liking, smother with the avocado mash. Lay smoked samon on top of avocado.
  • Top with diced red onion and capers, or your preferred toppings. Enjoy!

Recipe Success Tips
    • Make to Serve. Toast the bread, remove the pit, and mash the avocado right before assembly for the best texture and taste. 
    • Enjoy fresh. Leftover avocado smoked salmon toast does not keep well, so it is best immediately after serving. You can dice your red onion ahead and store it in an airtight container with a small paper towel in the fridge.
    • Toast to your preference. For a crunchier salmon toast recipe, toast the bread until golden brown. For tender and more chewy bread, toast it until just crisp. 
    • Don’t skip the lemon juice. The acid in the citrus helps to slow down the avocado browning and helps to brighten its flavor. It’s a deceptively essential ingredient!
    • Adjust the servings. Multiply the ingredients by the desired amount to make the toast for more people. If planning on serving it for a crowd, toast the bread on a sheet pan in a 350° oven for 5-10 minutes, turning the bread halfway through or until toasted to your liking.
