Leftover Tri Tip Nachos Recipe

These easy tri tip nachos add leftovver steak, and cheese sauce to a bed of tortilla chips, then top with BBQ sauce and sour cream for a delicious and casual meal.

Ingredients
  

  • 6 oz tortilla chips
  • 6 oz tri tip cooked
  • 4 oz cheese
  • ¼ cup milk
  • ¼ cup bbq sauce
  • ¼ cup sour cream
  • 1 ea green onion

Instructions
 

  • Preheat oven to 350 F and line baking sheet with aluminum foil. Arrange tortilla chips on pan and cut tri tip into bite sized pieces.
  • In a small saucepan over medium heat, melt the cheddar cheese into the milk, whisking continuously until you have a smooth and creamy sauce. Immediately pour over prepared tortilla chips.
  • Top cheesy chips evenly with tri tip and bake for 5-10 minutes, until meat is warm. While in the oven chop green onions and any other desired toppings.
  • Remove from the oven and garnish with sour cream, bbq sauce, green onions, and enjoy!

Notes

Serves 4 as an appetizer, 2 as a meal. To double this recipe, use a standard half sheet instead of a small quarter sheet pan.
Store bought queso cheese can be used in place of the milk and cheddar to minimize prep.
