Instructions
Soak wooden skewers in water while preparing chicken (skip if using metal skewers).
Cut chicken breast into 1.5-2 inch chunks, and add to a bowl with the olive oil and seasoning. Stir well and allow to sit while you prepare the butter mixture.
In a medium microwave safe bowl, melt butter. Add lemon juice and grate in fresh garlic, then stir in ⅔ of the parmesan cheese.
Preheat air fryer or oven to 400 degrees F. If needed, trim skewers to the size of your appliance, then skewer the chicken onto the skewers.
Cook chicken skewers for 5 minutes, then use a basting or pastry brush to add the parmesan mixture to the tops, flip, and add additional mixture to the other side.
Cook an additional 5 minutes, then coat both sides of the chicken skewers a second time with the remaining garlic parmesan butter. Cook an additional 2-5 minutes, until chicken has reached a minimum internal tempearture of 165 F.
Garnish with remaining parmesan cheese and enjoy!
