Avocado Tomato Feta Toast

Equipment

  • 1 knife and cutting board
  • 1 small mixing bowl
  • 1 fork or muddler for mashing
  • 1 toaster or oven
  • measuring cups and spoons
  • citrus juicer optional

Ingredients
  

  • 1 lg avocado
  • ½ teaspoon lemon juice
  • 2 slices sourdough bread
  • 4 oz grape tomatoes
  • ¼ teaspoon salt to taste
  • 1 oz feta crumbles
  • 1 tablespoon balsamic glaze

Instructions
 

  • Mash the avocado and lemon juice in a small bowl.
    1 lg avocado, ½ teaspoon lemon juice
  • Toast the bread, and slice tomatoes in half.
    2 slices sourdough bread
  • Spread the avocado mash evenly on the bread slices. Top each slice with tomato halves and sprinkle with salt to taste.
    4 oz grape tomatoes, ¼ teaspoon salt
  • Add feta cheese and drizzle balsamic glaze across the tops. Enjoy!

Notes

  • Toast to preference. For softer or more chewy toast, toast the bread on a lighter or shorter setting. If you prefer it crunchier and golden brown, toast it on higher heat or for longer. 
  • Season to taste. Sprinkle the salt to your taste preferences, adding more or less if desired. For a brighter finish, you can also squeeze more lemon juice on avocado feta toast before serving.
  • Make to serve. This avocado and feta toast is best served fresh, if you don’t plan on eating both pieces of toast, halve the recipe.
  • Doubling or multiplying. Serve the whole family or a crowd by increasing the ingredients by your desired amount. For larger batches, toast the slices bread spread out on a sheet pan in a 375°F oven for 5-10 minutes or until it has reached your desired doneness before topping.
