Air Fryer Pork Tenderloin Medallions

This easy pork tenderloin cuts the cook time by slicing the meat ahead of cooking. Marinate the night before or morning of for an ultra easy and fast weeknight dinner!

Ingredients
  

  • 1 lb pork tenderloin
  • 2 tablespoon dijon mustard
  • 2 tablespoon Worcestershire sauce
  • 2 tablespoon Olive oil
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions
 

  • Mix all ingredients except the pork in a small or medium bowl. Once well combined pour over the pork tenderloin in a zip top bag and marinate in the fridge for at least 30 minutes.
  • After marinating, slice the pork tenderloin into 8 equal pieces by cutting in half, then each half in half, then each quarter in half. Air fry at 350 degrees F for 9-12 minutes, until pork reaches an internal temperature of 145.

Depending on the size of and accessories your air fryer has, you may need to air fry in 2 batches.
If an air fryer is unavailable, you can cook this on a wire rack on top of a baking sheet in a traditional oven at 400 for 13-18 minutes.
