Slow Cooker Curried Sausage and Vegetables

Ingredients
  

  • 14 oz kielbasa
  • 11 oz yellow curry sauce
  • 13.5 oz coconut milk
  • 1 lb baby carrots
  • 1 ea yellow onion

Instructions
 

  • Add coconut milk to slow cooker and whisk coconut fat back into milk. Add curry sauce and mix to form sauce base.
  • Cut up kielbasa and onion into bite-sized pieces. Add them and baby carrots to slow cooker.
  • Stir everything together and cook on LOW for 6-8 hours, or high for 3-4 hours.
  • Stir before serving, and enjoy!

Notes

Dish goes very well with rice or naan.  To make this a one pot dish instead add diced potatoes or sweet potoatoes along with the carrots and onions.  Peas can also be added the last half hour of cooking if desired.
