Smoked Sausage and Sweet Potato Skillet

Ingredients
  

  • 1 lb sweet potato
  • 1 large sweet onion
  • 14 oz smoked sausage
  • 1 tablespoon olive oil
  • ½ teaspoon black pepper
  • ½ teaspoon sea salt

Instructions
 

  • Chop sweet potatoes and onion into ½" cubes or pieces, and add to skillet with oil, salt, and pepper. Preheat oven to 350 F.
  • Cook over medium heat for 10 minutes. Meanwhile slice smoked sausage into rounds or half rounds.
  • Add sausage to skillet and stir to combine. Cook in the oven for 20-25 minutes, until potatoes are tender and sausage is piping hot.
