Crockpot Mashed Sweet Potatoes with Brown Sugar and Butter

Ingredients
  

  • 3 lb sweet potatoes
  • ½ cup butter 8 tablespoons (usually 1 stick)
  • ½ cup brown sugar
  • 1 tablespoon cinnamon
  • 1 teaspoon salt

Instructions
 

  • Peel and cut sweet potatoes into large chunks.
  • Layer ⅔ of potatoes in crock pot, then top with half of the seasonings, butter, and brown sugar. Add remaining potatoes and add the remaining butter, brown sugar, cinnamon, and salt.
  • Cook on low for 6 hours. Mash when finished.

A slow cooker liner is not recommended for this dish as it may tear during mashing.  Nonstick spray can be used on the insert.
